First it is seared in coconut oil and deglazed with honey and lime and lemon juice.

The meat is served on jasmine rice, which is flavored with freshly grated ginger and tastes wonderfully fresh. Shredded coconut, which is sprinkled on the chicken before serving, and a handful of fresh coriander leaves complete the dish.

Ingredients for 3-4 servings:

800g chicken breast fillet, 1 unsprayed organic lime, 1 unsprayed organic lemon, 2 tbsp coconut oil, 1 tbsp honey, salt, pepper, 2 tbsp desiccated coconut, 2 handfuls of coriander leaves

250 g jasmine rice, 500 ml water, 1 piece of ginger as thick as a thumb, salt

Preparation:

1. Wash the lemon and lime with hot water, dry them and cut the peel into strips (make sure that as little white as possible remains on the peel). Squeeze out the juice.

2. Wash the chicken breast fillets, dry them very well (the meat should be as dry as possible so that it sears well) and cut into bite-sized pieces.

3. Mix the chicken breast pieces with the lime and lemon peel in a bowl and refrigerate for about 2 hours.

4. Wash the coriander, shake it dry and pluck the leaves.

5. Peel the ginger and grate finely.

6. Wash the jasmine rice well in a sieve and let it drain.

7. Put the rice with 500 ml of water, 1 teaspoon of salt and the grated ginger in a saucepan with a lid. Bring to the boil and reduce the heat to the lowest level. Simmer until the water boils and the rice is fluffy (this takes about 20 minutes). Remove from the heat and let rest a little with the lid closed.

8. Remove the lime and lemon peel from the meat.

9. Heat 2 tbsp coconut oil in a non-stick pan. Sear the chicken vigorously over high heat (if necessary in portions if the pan is not big enough) until it takes on color at the corners.

10. Add 2 tablespoons of honey and toss the meat in it briefly until the meat is lightly brown. Deglaze with 2 tablespoons of lemon and lime juice each (if you like it more sour, take a little more) and remove the pan from the heat. Season with salt and pepper and, depending on your taste, 1 teaspoon coconut oil.

11. Arrange the rice on a plate, place the chicken on top and sprinkle with coconut flakes.

12. Serve the fresh coriander separately to the dish, so everyone can refine the dish with the fresh herbs as they wish.
